Relying on solar, and supplementing that with a generator, allows them to not only provide consistent service in the event of an emergency but also avoid food wasted that can occur when other large kitchens lose refrigeration. Bruce's Catering maintains a relationship with local farmers, key to keeping their kitchen green—local, organic produce and sustainable seafood are served whenever feasible. A waste diversion program in the kitchen ensures that recyclables get recycled, and kitchen scraps get composted to create fertilizer and fuel for natural gas vehicles. All extra food is donated to the Hope of the Valley Rescue Mission, ensuring that as much food as possible is used. In addition, Bruce's Catering use compostable packaging whenever they can.
